With its very fine, delicate flavour, summer honey is a real floral explosion on the palate. Produced mainly from the blossom of white clover, lime, crucifers and raspberry, it is also made up of a multitude of wild flowers that adorn the Upper Laurentians during July. At times, it also has an invigorating, minty freshness that comes from the nectar of the linden tree.

Creamed honey is made from honey that is simply churned to give it a creamy consistency.

STORAGE
Crystallised honey does not respond well to excessive temperatures (over 25 degrees), which can cause its crystalline structure to collapse (phase shift). Ideally, honey should be stored in a place where the temperature does not exceed 20 degrees.
